A forward-thinking F&B Creative with a talent for food and innovation; from Michelin star originality to delivering some of London’s most exciting brands.

With an all-round understanding of operations, I’ve a proven track record for maintaining, improving and developing successful businesses. From devising restaurant concepts, through to site design, menu creation, recruitment and training, I have delivered a series of successful contemporary restaurants, Hotel concepts and social entertainment brands over the past 10 years; including TOCA Social, Hoxton hotels, Dirty Bones, Señor Ceviche, The Rum Kitchen and Foley's.

Having worked at the Fat Duck Experimental Kitchen I also have a remarkable eye for detail and impeccable standards. This experience combined with my unique creative approach, strong business acumen and a huge passion for outstanding food and drink, means I deliver exciting, stand-out experiences for any brand I look after.

I developed RC³ as a platform of consultants to allow our clients access to the industries leading specialist all under one roof. From globally recognised cocktail creatives to multi brand investors and from science lead multi sensory environment developers to world class graphic designers - We are all here in one place.

Em Brightman

Culinary innovation director - menu and dish development

Em, a seasoned chef with 14 years of experience in the culinary world, embarked on her culinary journey rooted in her love for cooking alongside her mum. Little did she know that this humble beginning would pave the way for a remarkable career that would take her to the heights of fine dining. Em took her first professional step into the kitchen as a pot wash. With each passing day, she soaked in the knowledge of various produce, honing her culinary skills on the IOW.
Eager to broaden her horizons, Em knew it was time to challenge herself further. London beckoned with its alluring gastronomic scene. Em's talent and dedication led her to join Yauatcha, a renowned dessert destination, where she contributed as a pastry chef. But Em's insatiable hunger for growth led her to make a bold move — she decided to join the prestigious Ramsay group. Here, she embraced the rigorous demands of Restaurant Gordon Ramsay which held three Michelin Stars. The journey didn't stop there, as Em ventured into the kitchen of Petrus which held one Michelin Star.
Em embarked on an enriching adventure across the captivating landscapes of Southeast Asia. Immersed in diverse culinary traditions, she absorbed the flavors and techniques.
Returning to London, Em embraced a new challenge by joining Angela Harnett's Murano. Eager to elevate her craft, she staged at some of New York's finest establishments, including Eleven Madison Park, Per Se, Gramercy Tavern, and Gabriel Kreuther.
Under Angela's guidance, Em spent seven transformative years, progressing from a Junior Sous to assuming the prestigious role of Head Chef. For the past four years, she has been at the helm, leading her team to culinary greatness with her unwavering commitment to perfection.

COFFEE AND WHITE LABEL ROASTING

Matt is able to pull upon over 20 years in the hospitality and service sector. Firstly in the Cocktail and late night industry in multiple cities in the UK, he then took a side step coffee. This has allowed him to work with and develop relationships with some of the best professionals and flavour obsessives around. Spending over 10 years with Wogan Coffee, he specializes in delivering coffee concepts, training programmes, machine options, drop shipping and white label solutions for a wide variety of businesses. With over 50 years of heritage behind them, Wogan Coffee is a company driven by flavour, it's what gets them up in the morning and drives them to that first cup. Very proud of three generations of history behind them, their attention to detail mixed with the willingness to help clients grow is unmatched in the sector.

Wine list development and supply chain

Angus has been working with restaurants for over 10 years and has a network of other great suppliers with the same philosophy to work alongside Carte Blanche to develop the perfect and bespoke wine list for all RC3’s clients. Carte Blanche Wines is an independent importer of family-owned wine estates. We research and visit all the regions we work in and work with growers who respect the terroir and ecology of their land and who produce wines that are as elegant and pure as they are compelling and drinkable. We distribute to over 250 of the finest restaurants and wine shops in the UK and pride ourselves in the strength of our partnerships with our clients.

Gareth Bell

Global Bar operations, creative and training

Gareth is a seasoned hospitality professional with over two decades of experience, specializing in bars and bartending. His career spans across various continents, launching bars and restaurants in locations ranging from the UK and Europe to the Middle East, Asia, Africa, and the Caribbean. Serving a wide array of clients, from large corporations to local niche brands, Gareth has evolved from bartender roles to General Manager positions and multi-site operational responsibilities in cities like London and Amsterdam.

Gareth's journey in the industry has provided him with invaluable insights into all aspects of bar operations, encompassing daily management, new openings, and rebranding projects. While excelling in operational management, Gareth's passion lies in training, cocktail, and menu creation, which have been fundamental to his career growth. He consistently stays abreast of current trends, innovations, and techniques within the drinks sector, ensuring that his expertise remains pertinent and practical.

In 2017, Gareth transitioned into international consulting, collaborating with prestigious hotels globally. His consulting projects have involved developing customized training programs and crafting cocktail menus for esteemed establishments such as Four Seasons Hotels, Ritz Carlton Hotels, and Shangri La Hotels, among others. Throughout his consultancy ventures, Gareth integrates local flavors and cultural elements into his creations, aiming to convey immersive stories through his menus and beverages.

Emphasizing a people-first approach, he underscores the significance of clear communication and collaboration as fundamental drivers of successful consultancy endeavors. With his meticulous attention to detail and genuine dedication to hospitality, Gareth continues to excel in his field, delivering exceptional results across all his undertakings.

Sally Mccoy

Interior design

A straight talking seasoned interior designer with 25 years of experience. Having worked with some big names in the hospitality industry she's known for creating amazing places like nightclubs, restaurants, and fancy homes in the UK and around the world. Sally isn't just about making things look fabulous ; she's a pro at making places reflect the brand or the person. People love her work because it's not just about design; it's about creating an experience. When she's not working her magic, Sally enjoys sipping on a good gin and soaking up the vibes in Ibiza.

 She's always excited for the next project, especially now that she's teaming up with RC3 and other experts in their fields to create a dream team of professionals.

A design generalist with over 10 years of experience creating thoughtful, inspiring and effective design solutions in the UK and abroad for a wide range of clients, from startup businesses right the way through to international household names and a large number of hospitality brands. Matt has a proven ability to work across a wide range of disciplines, including graphic design, illustration, and 3D.

Protein supply chain innovator & Hospitality entrepreneur

After dropping out of art college in 1998 and disappointing my parents, I convinced my Dad to let me work alongside him at Smithfield Meat Market…for what I thought would be a year max….times that by 6! In that time I managed to learn my way around whole beef and lamb butchery, what made great meat great and how to select the best of the best. All of which stood me in great stead when I knocked on the door of the first restaurant I began to supply and asked to speak to the chef about his meat requirements. 22 years later we are working with over 100 chefs, delivering nationally to over 300 sites on a daily basis and working with some incredible and inspiring farmers, all of whom understand and value the importance of ethical, sustainable and regenerative farming. A transparent supply chain, with integrity and honesty is something I used to dream about in the early days ..but it would appear we have managed to create just that and never have I felt so confident about the future of a sector that has seen such significant challenges over the years.

I’ve worked alongside many chefs over the years, some are now firm friends and what I would consider family. Ross falls slap bang into that category, so I am truly flattered to have been invited to be part of such an inspirational collection of truly great industry minds and will be working my socks off and everyone else’s in my team, to make sure his vision is the success it deserves to be.

Andrew geraerts

Kitchen & bar designer - Tender specialist

Designing, specifying and managing catering projects for the last 16 years. I have been running the special projects division with Airedale over the last 6 years. My focus is on delivering bespoke designed Kitchen & Bars that meet the client’s needs including equipment, development of tender specifications and packages. I have worked on numerous projects during my career with The Airedale Group. Gaining invaluable skills and knowledge that have led me to work with industry leading clientele such as Ennismore Group, Intercontinental O2 for the Aurora Group, Taj Hotel, Radisson Group, Hilton Hotel Group and many others. Over the past 4 years we have been expanding into Europe, developing a consultancy and project delivery within the Hotel and Hospitality sector with major clients. We have built a network of contacts to deliver projects from start to finish.
